Chef Jason DiGuilio’s passion for cooking can be easily traced: growing up in a Sicilian Italian family as well as working in the industry at a young age, instilled an early love of food within Jason. It came as little surprise, then, that Jason decided to forge a career path out of his love of cooking.
After graduating high school in the Bay area and working as a cook in an Italian Pizzeria his hands on training began at the age of 19 where he was given the opportunity to manage the kitchen operations in a small restaurant located in Meadow Valley California. Five years later Jason opened his own restaurant positioned right in the heart of downtown Quincy, California. He catered to the locals, tourists, and businesses looking for the perfect place for a lunch meeting or an evening of fine dinning. In 2005 Jason sold his restaurant and moved to Mammoth Lakes, California, where he accepted a position as Chef/Assistant Manager of Parallax restaurant and McCoy station, Mammoth’s mid-mountain lodge, where he lived at 10,000 feet during the 05/06 season. Parallax offered lunch as well as fine dining, snow cat dinners amongst the snow and stars.
After the 2006 season in Mammoth Jason accepted the Sous Chef position at Restaurant Lu Lu in the heart of the Village where he helped manage the restaurant’s southern French menu concept as well as baker for their daily fresh baked breads.
After almost two years with Restaurant Lu Lu Jason was hired as Executive Sous Chef for White Bark Restaurant in the newly built Weston Monache hotel and resort.
In 2009 Jason moved to the Tahoe area and accepted the Executive Chef position for Tahoe Mountain Club where he became well known for his seasonal and ingredient driven menus at the club’s flagship restaurants, Wild Goose in Tahoe Vista, and the private ski lodge, Schaffer’s Camp, on top of North Star ski resort. Jason worked with local chefs in the community raising awareness for the hunger relief agency, Project Mana, as well as for the Best of Tahoe Chefs.
