Introducing The Virtual Dinner – Connect with Family & Friends!
Staying connected with family and friends during home stays and “social distancing” is new to all of us – and brings a creative aspect to maintaining friendships too!
Virtual dining is the perfect venue to spend some quality time together! Desmond and I enjoyed our first virtual dining experience with the kids last night with two hours of wonderful conversation! To share a little about our Elder family, Andrew (21) and Angela (19) are in CO Universities – quite far away from Truckee. Angela is hunkered down with Andrew on the Western Slope in lieu of Boulder, CO; both are studying online now and for the foreseeable future. With 847 miles between us, we keep in touch multiple times a day and decided to enjoy a “Virtual Dinner” together! We made pizzas and our family’s delicious Caesar salad. A great evening!
Just for fun, here’s a quick video of Alison making our family’s Fire House Caesar Salad, followed by the recipe below. Enjoy!
The Elder Family’s Fire House Caesar, Circa 1960
~ 1 – 2 large heads of romaine
~ 1 egg
~ ¼ C. of vegetable oil (not olive oil)
~ Crushed garlic, 4 – 5 cloves
~ Fresh juice of one large, soft lemon
~ 1 – 1.5 C. of freshly grated Parmesan cheese
~ 1 Tbsp Worcestershire sauce
~ 1 – 2 tsp Himalayan salt or iodized salt
~ 1 – 2 tsp Freshly ground pepper
Combine vegetable oil, lemon juice, garlic, Worchester sauce, ¾ C. parmesan cheese, salt and pepper in a blender. Microwave egg for 20 seconds (if you are at low altitude, if not about 25 seconds), add egg to mixture. Blend together for approximately 30 to 40 seconds on high. Let sit for about 20 to 30 minutes so flavors combine.
Assembly:
Rinse first and then soak romaine lettuce, separate leaves, in cold water for about 10 minutes. Spin dry and lay flat on paper towels so leaves air dry. Once dry, pat lightly and put in a large serving bowl. Toss dry lettuce with salt and pepper, this makes a big difference in flavor!
Serving:
Tear lettuce in large pieces and toss to move salt and pepper around. Re-blend dressing mix and pour over leaves, toss. Add croutons and toss again. Top with a little ground pepper. Serve immediately!
